Used red enchiladas sauce instead of rotel (about 15oz), half a can of creamed corn lots of cheese in the meat mixture, used a store bought taco seasoning for the meat mixture and Krusteaz Honey Cornbread with the other half of the can of creamed corn mixed in. The enchilada sauce made it too spicy for the kid but the adults loved it especially with the sweetness of the cornbread. Very good and will be a regular rotation.
