Again because i can't follow a recipe: I used ground chicken, I used two cans of Rotella and a giant scoop of salsa, I didn't add as much cumin or chili powder, I didn't trust the quinoa would bloom so I added a cup of water and cooked it for an extra 15 mins, I also used a whole bag of frozen corn instead of just a cup. Topped with Colby jack cheese and sour cream. Served with chips. My son ate two full servings.
