Excellent recipe! I made it with thick pork chops instead of chicken. The marinade was SO GOOD! I did double the marinade recipe because my pork chops soaked it all up and I wanted some for my veggies too. I was out of thyme so I didn’t put it in. Honestly I think I could prefer it without the thyme but I’ll try it just to see. The cooked lemons were a great touch and after cooking it was easy to squeeze the soft lemon flesh onto the meat and veggies. Really made the flavors pop! I liked them so much I plan to slice more next time!
