Made it in a Dutch oven since I didn’t have a casserole dish and it worked fine, just made it a little more soupy. Might have added a little more flour or less broth to help it thicken up more, but that could have just been because of the pot. Never bother peeling potatoes, it’s unnecessary! Also just used halved chicken breasts since that’s what I had. Makes a lot of food! Great flavor, don’t skip out on the leeks! Just seasoned the chicken with garlic powder, salt and pepper. Turned out great.
