A great classic vindaloo. Don't rush this one. Where it says to use a "mug," I went with a 6-ounce tea mug. With no more to go on, and seeing that this isn't supposed to be too wet, a smaller size made sense. I did not make it a day ahead, but we'll have leftovers for flavor comparison. It's delicious right after cooking. Another day will deepen the flavors.
