As written, this recipe is terrible. Following the instructions, you'll get (admittedly good) scrambled eggs, which I tossed in the garbage, cause I'm not putting that on wings. The ingredients are sufficient for making a good sauce if you know what you're doing though. Here's what I did:
1. Add the eggs, pepper, and cheese to a metal bowl, whisk to combine.
2. Heat the cream in the microwave.
3. Add the cream slowly to the eggs while whisking. This tempers the eggs (warms them up without scrambling them).
4. Get water simmering in a pot, then place the eggs (still in the metal bowl) on top to create a double boiler.
5. Whisk every minute or so until at desired consistency. It might take upwards of 20 minutes.
6. The bottom of the bowl will create a thin layer of cooked eggs that you'll whisk back into the sauce. The goal is to have a thick sauce, not lumps of scrambled eggs.
