This pizza is so unusual & outside our usual pizza cravings & comfort food, it's not tomato based or covered in goey cheese but sweet & savory & such an unexpected taste that it has become one of our favourites. I make it with gluten free flour instead of gluten (my partner is GF) & pan cook it on stove top & finish in the oven. I think it doesn't matter what you do with the base, but it's the actual toppings that make it what it is. I also serve with rocket (olive oil & basamic) Omg! That honey, thyme, lemon drizzle on top is da bomb, dont be lazy & not bother with it as it makes the dish.
