This is the mast delicious banana cake. Much richer than banana bread. We have been making it in our family for every birthday cake for more than two decades. My son will entertain no substitute even though he does not eat sweet things most of the time. Very easy to make and I've never had an unsuccessful one in 24 years. Our favourite icing for it is a plain butter icing modified with a tablespoon of fresh lemon juice in place of vanilla. It sets off the sweetness and richness of the cake just perfectly. The only time we don't use that is for my son's birthday. He prefers it with no icing and just dusted with icìng sugar.
