This was pretty good but the recipe could stand some improvement. It doesn’t say to break the rice noodles in half, but trust me, if you have a 6qt IP you will probably need to break them so they’ll lie down in it properly. And I didn’t trust the extremely short cooking time for the noodles so I added a couple minutes. I tossed my peanuts and lime juice in there and let it all steam together for a minute. I forgot about the red pepper flakes and don’t really like my food super hot but I think next time I make it I’ll ad just a tiny pinch. I like it with the tofu!
