Really great base recipe!! Used 1 can black beans and 1 can red kidney beans. Added corn, extra seasoning (paprika, oregano, extra cumin, pinch cinnamon), a bit of lime juice, less water, and carrots instead of zucchini. Also was a little watery so I added a slurry (corn starch and water mix). Finished with cheddar cheese, but also would've been good with cilantro. I imagine adding a meat like beef or pork would be good, too. Switched to high heat from medium on the crock pot after about 2 hours since the sweet potatoes were still pretty firm, took abou 4 hours total.
