How to Cook an Octopus in Instant Pot
1 octopus
3 cloves of garlic
1 bay leaf
½ Tbsp of pepper
Remove the head, slit it in half and turn it inside out to remove its contents, including the eyes. Remove the beak. Rinse the octopus under running water.
Add water in the pressure cooker enough to cover the octopus. Add garlic, bay leaf, black peppercorns, a pinch of salt, and bring to a boil before adding the octopus.
Dip the octopus in the water tentacles first to let the tentacles curl. D it a few times. Then drop the whole octopus in the pressure cooker.
Close and lock the lid of the pressure cooker. Set pressure cooker to cook for 15-20 minutes at high pressure (timing depending on the size of the octopus).
When time is up, open the cooker by releasing the pressure quickly.
Check the octopus for tenderness. If needed, close the lid and bring to pressure for another few minutes.
Remove and strain the octopus.
Slice the head and tentacles into small bite-sized chunks.
