These beauties are a staple now! The trick to getting good pita chips that are not just crispy but also have volume is to let them sit with the olive oil for an hour before tossing them in the oven. And start with thicker pita bread. That trick gave me the volume I've tasted with storebought pita chips. I also added rosemary and garlic, but you can obviously do whatever spice your heart desires. I've also tried making these pita chips with Zatar seasoning - it's a mix of sesame seeds, cumin, and other spices that give a very Mediterranean flavor. It took about 30 min the oven.
