I try to cook new recipes with fidelity, just to see how they turn out as written, then I modify to my preferences the next time. For thin pork chops, I would cut the cooking time to 4 min per side. 6 min was too well-done for my taste (6 min would be better cooking time for thick loin chops.) Sauce wasn't spicy enough or garlicky enough for my family, and was a little too heavy on ginger. Next time, going to cut the ginger to 3 tsp and add a teaspoon or two of chili garlic paste. Overall, good meal and will try it again with modifications.
