I had a day off today, I spent it grocery shopping and cooking, so I made this twice. The sharp apple cider of the pickles really enhanced the dish and cut through that rich sauce. The raw onions added a bit of crunch and the pomme purée bound it together. Was tremendously disappointed in the cooking of the pork but as far as flavour and texture go i think it’s pretty much on the money with some tweaks needed. Added some pork scratchings on at the end to give a bit of extra texture and seasoning to a dish that probably didn’t need it. I’d love to see any different ways to use these fantastic ingredients.
