This has become my new favorite comfort food. It's delicious, warm, creamy, and just absolutely lovely. Took others' advice and didn't bother putting the skillet in the oven (mine isn't oven-safe anyway), instead adding the cheese then replacing the lid and letting it melt.
I definitely recommend adding WAY more salt than the recipe calls for, and tasting often. In my personal opinion, adding a splash of extra cream is also an A+ recipe hack (though you may have to let it simmer off for a little while longer before adding the cheese). Also, chicken thighs are superior to chicken breasts. Just saying. ;)
If you can't find a frozen peas and carrots-only mix, I highly recommend one with green beans, peas, carrots, and corn.
