This recipe was good! I made a couple changes—1) used juice from one whole lemon instead of just a tablespoon; 2) added one habanero pepper for some crisp clean heat; 3) seasoned the chicken before cooking; 4) added more of the spices than the recipe calls for. Overall, I enjoyed this recipe. I’ll likely add it into my meal plan rotation to change things up a bit. If you are using this for a meal plan, I’d suggest not adding the lemon to the pot right after cooking. Instead, put it to the side until right before you eat each meal. The raisins add a nice sweetness that complimented the heat from the habanero and the lemon juice was necessary to help cut through the heavy spices.
