I haven’t made these, however sometimes I’ve had this happen with too much marinade dripping onto the oven or it burns more easily. You could try shaking off excess marinade before putting it on the pan to see if that helps! Since it is marinating overnight the flavors shouldn’t have to rely on it being too thick while cooking.

This is probably 7 months too late but if you’re using skewers soaking them may not be enough. I wrap the exposed parts of the pre soaked skewers in foil and the Smokey house doesn’t happen anymore. I hope you try again!!!
