in Ginger Miso Soba Noodles with Crispy Chickpeas (vegan) Recipe

I did a major tweak. I replaced the chickpeas with tofu (marinated and air fried). Also I'm not a fan of raw garlic, so I put the sauce on the stove while everything else cooked and let it cook down a bit. Also n.v threw on some steamed broccoli. That being said, it was fab. We ate every scrap.

Do u think using roasted carrots would work in the sauce instead? Or even sweet potato?
