Made these several times now with a few adaptations for what I had on hand. I've used peanut butter (not as healthy but it's what I have) and turns out great! I really like using the dates but have also done it with dried cherries which also works well. The first time I made this I didn't have coconut oil so I just used vegetable which worked fine in a pinch but I do prefer the coconut for some healthy fats. I love these as an easy chocolate treat (I'll admit I add a few chocolate chips as well) and store them in the freezer. They're super mushy and don't stay together super well but freezing them makes it the perfect texture in my opinion. Once frozen on a sheet pan I put them in a little plastic bag to eat as wanted.
