Are you asking can you leave out the corn starch? or what are you switching it out with? U can add extra flour but they won't be the same. Corn starch makes them keep the shape while in the cooking process and gives a glossy look to the cookies.

As Tanya said, the cornstarch is important for the texture and to keep them from spreading. You could use more flour or even something like potato starch or rice flour, but the amounts may not be a direct swap. I haven't tested substitutions so I don't have an exact answer for you, Michelle.
