First time making roll-ups and it was easier than anticipated!
I was worried about the lasagna noodles breaking while rolling, so I made sure they were cooked enough.
Didn't have wax paper, so I used a cookie sheet to contain the messiness. The dried noodles fit perfectly and didn't move around as I spread the filling.
One roll with a small salad was satisfying and I didn't feel weighed down after my meal. Leftovers were good but a little dry so I added extra sauce while reheating.
Overall, I would make this again. There's a lot of room for variation. The filling was a bit bland, so next time I may add some garlic powder or maybe saute fresh spinach with garlic and onion for extra flavor.
