I ended up subbing the bouillon/water by using 1/2 a cup of beef stock and I used a table spoon of butter and half a cup of milk instead of sour cream. Next time I will make sure I have sour cream on hand though because I definitely think the butter changed the flavor profile a lot. I added some canned mixed veggies as well as peas and corn. We also used an extra half pound of beef. All of this made enough for 2 bowls the size of the 1 in the picture I included. My husband and I both ate about 1/3 of the bowl (and we are both heavy eaters). So I'd say the recipe feeds 6 pretty easily. Even more so if you spread it out better than we did. You may need to make extra mashed potato though.
