my bf and I make this recipe so much! I mix it up a lot- I don't always add cilantro, haven't had it with quinoa, and sometimes I just use regular canned tomatoes instead of fire roasted- all turn out delicious! I love adding a lot of fresh veggies and things like tomatoes, avocado, green onions, sour cream, etc! We also like to eat it with naan warmed up with butter on it. I typically use whatever cheese I have on hand- which is usually either cheddar or mozzarella! Seriously super easy and delicious! great for summer too, 'cause no oven!
