This recipe was crowd-pleaser with fussy children. I tried multiple versions of it and the best I came out with was cutting half of the halloumi in cubes and save six slices for the top (as shown on the picture). I mixed the cubes within the sauce for a better distribution of halloumi and beans.
I also tried another time to swap the cannellini beans with baked beans (and tomato sauce) to which I added just one of the two tins of plum tomatoes and the result brought a nice sweet-sour combo. I'll keep doing it!
Also if you want better grilled halloumi slices, I would recommend to pop them on the pan until golden, it works much better than in the oven!
I served it with rice but the website shows différents alternatives that I must try: sweet potato wedges, cauliflower, couscous... The list is pretty much endless!
