I have always made gyros with chicken just for simplicity, and I wasnt sure I could make real gyro meat at home. I tried this recipe for dinner today (had to wait until the weekend as it does require some extra fridge time) and we loved it! The recipe doesn't state ground or whole spices, but I used whole ones except for the thyme and cumin (the texture of those ungrounded bother me) and just reduced the amount of those two by half. Otherwise I did exactly as the recipe said and it was fantastic! I made my own tzatiki, and had the meat, tzatziki, onion, red chili sauce, kalamata olives, and feta on a pita. It was really freaking good! Would also be great on a salad. Made enough for two dinners for my husband and I.
