I used bone-in pork butt and it worked beautifully with this recipe. I also separated the fat that rendered out and fried up corn tortillas in that pork fat and they were sooooo good. If you’ve never used corn tortillas for tacos you basically heat up some oil or pork fat and cook your corn shells until they’re just a little stiff. If they’re too soft they’ll fall apart and if they’re too crispy they’ll be hard to chew.
