Pros: flavor is FRESH. Lemony cheesy pasta-y spinach comes through in delicious waves. It’s not complex but excites the palate. The citrus aspect really makes you do a double take if you’re not used to lemon in savory dishes, but it’s quite a nice change. The spinach adds a much appreciated earthy umami to break up the presence of the lemon. We were able to accommodate an entire lb of pasta with the amount of sauce it produced! If you like it extra saucy, I’d go for the half lb of pasta.
I also added a little red pepper flake (read: a lot).
Cons: Recipe needs a little more salt! The cheeses aren’t quite enough to boost the flavor. While I didn’t mind the intense lemon flavor, I’ll likely reduce the lemon juice next time to perhaps half - my partner remarked that it was a smidge overwhelming.
Overall it lands a place in my cookbook for Ease and Flavor 🙂
