I had a half gallon of whole milk to use up so I tried doubling the recipe. Instead of the rice that they recommend, I used a cup and 2/3 of brown rice to one cup of wild rice and made it in my rice cooker. I used a pound of Velveeta cubed and two cups of sharp cheddar cheese shredded. I was going for comfort food so rather than put in cream of potato soup which I did not have oh, I use two cans of cream of mushroom soup and one can of cream of celery soup. The next time I make this I will use half the amount of milk but the same quantity of cheese and rice. And the bacon and chives on top are very good.
