Great muffins! Don't skimp on the lemon zest, it adds so much great flavor. We made these with almond milk and added a little extra lemon juice and they turned out great.

Made these with Julian. Just want to add that we baked these for about 15 minutes - the insides were quite soft and the tops had a pleasantly firm, slightly crunch-y texture. This would be a good base for most muffin recipes, I'd say.
