Very tasty! I use a trick I learned elsewhere which is salting the aubergine slices and letting them sit in a colander in the sink for 30 minutes, then rinsing them thoroughly, pressing dry with kitchen paper, and then baking them like the recipe says. Helps with removing the bitterness, worth the trouble. We also used a leftover homemade marinara sauce instead of making it from scratch this time, which sped things up.
