This was good but I would do a couple of different things. Firstly, if making tofu again - I would dip it in either flour or cornstarch and fry to get it crispier. I think chicken would be great too. Also, folded the burrito and then added to the pan and seared the filled burrito until it was crunchy. THEN once on the plate I added sauce over the top, added the green pepper, cilantro and peanuts.
In the burrito was the water down refined beans and quinoa which I added sriracha and goguchang (?) — delicious.
I added the veggies after so I could freeze the burritos. Feared the veggies would add too much moisture upon reheating and the burrito would become soggy. It was perfect that way.
