I've made a lot of dishes and this was the best thing I've ever made. I did not skimp on any ingredient. $33/lb for Pancetta! Also 1.5lb fresh caught Venison from a friend. I did opt to do the beef stock instead of the mushrooms and mushroom water and I doubled the red peppers. The flavor profile is so complex and the dish is very filling. Serves 6, not 4.
