Awesome one pan dish that’s great for the weekday! I used cod, and 3 bay leafs during the rice cooking phase.
Really well thought out steps and process, but the fish did get cold once the rice was done. So I added the fish on top for a few seconds and covered the pan. In the end, the rice at the bottom was nice and crispy (by accident), and overall really nice and hearty.
I personally loved it, however the white pepper may be a little spicy for some people. If you are sensitive to spice, I would only add in a pinch or a different kind of spice that would be mellower.
