Made these for my grandmothers birthday! Every part of the recipe came out perfect, I made no changes (except for being liberal with my use of lemon zest).
This was my first time making lemon curd and it came out so silky and delicious. I watched a YouTube video as well so that I knew when to take the mixture off the heat, as I do not have a kitchen thermometer.
I used double-sized cupcake molds and they browned and baked beautifully, with a slight crisp around the edge—perfection!
