I’m not a fan of roll and slice cookies, so I did these as cut outs and it worked pretty well. The dough was a little on the soft side for cutouts, but doable. Refrigerating the dough before rolling helped it firm up a bit.
The cookies started out very hard, but softened overnight. The orange flavor in the icing was a little overwhelming at first, but it settled over time and the spices came through.
The end result was a very nice blend of orange and spice flavors. But I would definitely recommend making them the day before and leaving them out overnight for the flavors to mature.
