So I accidentally bought 4 lbs of lard for a recipe and have been looking for ways to use it up.
These biscuits… damn. I sometimes find biscuits tricky and these came out just perfect and delicious. I was a little nervous when the dough tasted salty to me, but the end product was incredible and held up well under some sausage gravy. They really are the best biscuits I’ve ever made.
Notes: I used a food processor (hand-pulled) to work the lard into the flour. Best way to get crumbs w/o melting the lard.
I accidentally rolled them too thin before cutting (about 1/2 in.) so I just folded it over on itself. The floured surface in the middle ended up working as the perfect break point to split the finished biscuits into an even top and bottom.
