I’ve been using this recipe for many years and though it’s time consuming, it is an excellent bake. I often cheat and use a good quality ready made pastry which speeds the process up. The frangipan almond mix is fabulous but make sure you don’t open the oven before it cooks or it will sink. I’ve made this with a variety of fruits and often used homemade jam instead of making a coulis.
