This was sooooo good! I used a can of crabmeat instead of the scallops for cost savings. I also added some Chipotle Chile powder for a light spice heat. I also used 6 small frozen ears of corn and 1.5 pounds of shrimp. 4 filets of Swai make a great flaky and sweet white fish that holds together in the pot. This was absolutely the best seafood chowder I've ever eaten, no lie. The only con is that there is no way it's a 5 minute prep unless you have a team! I know I did a lot extra but cutting filets, potatoes, carrots, and corn, plus peeling shrimp take some time. It was almost an hour for prep. I used 40 oz of chicken broth since I had lots of extra in the pot.
