I have made this Banana Walnut Bread before as a loaf. We enjoyed it immensely, slicing it into the size we wanted or needed.
Today I made Muffins, actually I think the first time any muffins unless you count Corn Muffins.
I did this in my Kitchen Aid mixer. States to melt butter I just softened it in the microwave (great feature), then creamed with sugar. Because of the mixer I did not mash the Bananas.
Added Vanilla, egg (which I warmed to room temperature by running it under cold water for a few.) And Bananas 3.
Then added the salt, baking soda and flour. (Which I sifted even though it says pre-sifted) it also stirred the flour, salt and baking soda I also added baking powder.
Set up the baking pan with 6 liners using 2.5 ounce scoop filled liners. This was an adjusted recipe which is nice with Whisk. I needed 2 more liners (after thought) 2 ounce scoop would work better. Even though all but the eighth liner was equally filled some grew larger then the rest. Tested them with a wooden skewer after 30 minutes of baking at the suggested 350° that was a good guess on being done. I had to cut some and scrap pan to take out the Muffins.
They actually look better then the loaf I made previously. Taste was fabulous!
Also, I had toasted the Walnut for 10 minutes @ 350° to bring out the oils Abita more.
