We are diary free so I found a cashew based cream cheese and it worked great!
I also cooked chicken specifically for this recipe…cut chicken breast into thinner slices, seasoned with salt, pepper, oregano and cooked on the stove in olive oil and butter. Juiced about 1/4 lemon into the pan while it was cooking. 5 minutes one side and 3 minutes second side, covered. It added some extra flavor to the recipe, it was great!
