Passed the southern husband test. He liked it so much he wants it weekly. (nice to want something, right?) I might do every other week or monthly. I definitely enjoyed it also.
I used a rack to double surface area in air fryer and that has become my norm now instead of doing stuff in batches. BUT I have discovered that the top tier gets done before the bottom, so I switch them halfway, made easier by using parchment inserts on the bottom that you can just pick up and then flip the rack into the bottom. Then flip the parchment onto the rack.
Made potato salad to use up a few red potatoes.
One lunch left for someone. I will update how they do heated up in the microwave.
