Overall very good! If I make again I will certainly use a can of crushed tomatoes instead of the cherry tomatoes. Or just chop up a big one if you like fresh things so that there is less skin.
Changes I made:
Picking out and blending the cherry tomatoes.
Adding parsley and some parmesean cheese to the tomatoe mixture.
Whole milk in squash instead of coconut milk.
Topped with mozzarella cheese.
Also, I used no bake pasta sheets. They cooked properly but I didn't like the texture nearly as much as the traditional pasta sheets.
It makes a lot, I did 2 pans slightly smaller than the 9 by 13 ones and froze 1.
Also I used baby Bella mushrooms.
