This was so creamy and mushroomy! A really easy way to use silken tofu, I would definitely try this again and switch up the veg (aubergine?) For a bit of variety, but this recipe is delicious exactly as it is. If anything I would maybe use less garlic as it was a very strong flavour, but that may have been as I added it quite late on in cooking. This also goes really well with mashed tattie instead of pasta.
