This was very good and filling! The dressing was really cool made with cashews. I recommend doubling the garlic in the dressing and adding more lemon. We used regular parmesan because we aren't vegan. The author claims you can save the leftovers but I really don't think you can, the romaine will wilt with dressing on it. So if you're meal prepping, definitely keep the dressing on the side. Tomatoes are kind of strange in a caesar but they were okay. We didn't add the optional avocado.
