This was delicious! I followed it exactly and really loved it. One note - I did heavily salt it before putting the final layer of bread on it. Probably 1-2 tablespoons - but I like salty soups 😅 The only thing I’d improve is the prep of everything. The instructions have you prep everything at the beginning - this took me 40 min! Instead, I’d recommend making the mirepoix (celery, carrot, onion) and then start cooking that, drain the tomatoes while it’s cooking and prepare the kale. Then while the tomatoes go in, prepare the bread. I think that would have saved me at least 15-20 min of prep time! But a really lovely recipe and everyone loved it. The crunchy croutons on top were fantastic.
