The lack of sauce and potential for dryness is one of the reasons I tend to prefer skillets and one pots over sheet pan dinners. But the lack of a sauce also means that you can create your own variations easily by adding different sauces when serving.

If using fall harvest vegetables, I like to use a Maple Dijon type sauce. Flavor to taste: 2 Tbl olive oil, 2 Tbl fresh thyme, 2 tsp fresh rosemary, 1/2 tsp salt, 1/4 tsp fresh ground pepper, 1/4 cup maple syrup, and 1 Tbl +/- dijon mustard and whisk well to combine, and toss to cover. It pairs with chicken and pork as well. Happy cooking! 😊
