I didn’t have enough spinach, so I used kale to bulk out the greens and it actually worked out really well. It tasted a bit bland at the end of the recipe, but it perked up nicely after I added some salt and pepper seasoning as well as chilli flakes and an extra splash of soy sauce. I would make this again but not when in a rush as it does take quite a bit of time cooking each element before eventually combining together.
