This has been my go-to for Christmas morning brunches at my daughter’s for many, many years. I tend to add more broccoli (depending on the size of the broccoli crown) and red pepper, and an extra egg, but that’s my preference. It’s great as is. To spice it up, you could try a chilli or jalapeño, or serve it with hot sauce. I have also made it with hash browns on the bottom, very good. I’ve never made it with cauliflower, so if you do, let me know what you think.
