**Update!
I made this with shrimp instead of beef and added sweet corn and topped with avocado. SO GOOD!
This was fine, it will be an easy week night dinner. I ended up adding black pepper, diced onions, and cayenne for flavor. I also would have added corn if I had it in the pantry! It was also my first time using quinoa for anything, but I loved it, so that's a plus!
