Tasty and easy; I roasted sweet potato, red bell peppers, and corn for the filling, and added some leftover refried beans. Straight-forward to assemble; next time I think I'll be more liberal with the cheese (as the vegetables can tumble out), and fill them less to make them thinner.
This recipe involves toasting the quesadillas on a dry pan, but I think next time I'll add oil and fry them
